PIG PREP
If you think you are brave enough to look at raw whole pig, here are the pics. Some are kind of horror show, so don't say I didn't warn you.
The marinade: lemongrass, garlic, soy sauce, patis (fish sauce), thai chiles, scallions, brown sugar.

Man, it was getting hot outside quickly. Good thing we were fast.

While working on attaching the pig to the spit, we started the coals.

The coals are almost ready.

As we attached the spit to the motor, we realized we didn't tie back the ears or foil them up.

We were anticipating an 8 hour roast, but I think we went to 9 hours.

OK, any picture too close to the head is a little creepy when it's raw.

In just a few minutes, we've got a little color. Only problem is the wind kicking up ash.

We didn't baste the skin enough, and as you can see, it's alreay shrinking and pulling within the first hour.

This picture is fat from the pig foaming, a good sign that our fire is perfect.

We'll need more coals soon. Color is coming along nice and slowly.
